Activities Carried Out
Activity aimed at conducting a series of quantitative and qualitative surveys to identify consumer motivations and behaviors, linking them to perceived quality and the implementation of a new product enhancement strategy aimed at international positioning. In addition, the study aims to analyze the perception of the environmental impact of the olive oil production process by the final consumer, who is particularly sensitive to the issues of sustainability and circularity of processes (WP5). The goal is to develop an overview of consumer behavior, not only with respect to product preferences , but also with respect to environmental issues.

- Identification of key factors influencing purchasing decisions , revealing significant development opportunities for companies in the olive sector. In particular, the survey revealed a variety of consumer profiles, each with specific needs related to product quality, supply chain transparency and environmental sustainability.
- The analysis unveiled seven clusters, each with unique needs and motivations that guide consumers in their choice ofEVO oil.
- The project highlighted that the value of EVO oil is recognized not only for its organoleptic properties, but also for its connection to the land, quality certifications and commitment to sustainable practices.
- The project showed a growing focus on sustainability, which consumers see as a key requirement.
- the project emphasized the importance of traceability as a crucial element in building consumer trust and loyalty.
