
WP3 – Quality, control and certification
Activities Carried Out
Quality, Control and Certification, is structured along four fundamental lines for the preservation and development of Italian heliotechnology: technological innovations (mechanical extraction/processing systems, advanced control sensors, new materials) for the production of oils of excellence, integrated with olive production logistics for dimensional and operational efficiency of the crushers of high quality extra virgin olive oil, in relation to varietal characteristics, the time of drupe ripening and the parameters of the extraction process; this action allows to acquire information on the overall quality of the product, thanks to the use of advanced technologies, and apply predictive models that allow to obtain products of quality and to diversify supply from a nutritional and sensory perspective; new analytical techniques and/or revision of existing ones for anti-fraud control; and advanced systems for assurance and certification of provenance, quality and theenvironmental impact Of the product.

Results
2020-2024
- Research outcomes related tooil aroma (definition of headspace chemical composition by gas chromatographic analysis).
- collected up-to-date methods for sensory analysis of oils issued by the International Olive Committee, as well as regulations on sensory laboratory accreditation.
- Agreement to train experts to serve on the panel that will work on the project.
- Determination of phenolic component in olive oils.
- Questionnaire to be administered online to consumers (Collab. WP 7)
- Results concerning the quality of oils in storage in relation to the values of compositional parameters.
- Outcome related to ‘investigation of the quality of commercial oils, relating the price range to the physical, chemical and sensory quality of products verified through laboratory analysis.
- Resistance to oxidation of oils with different polyphenol content.
