WP2 – Fruit ripening

Activities Carried Out

The activity focuses on using innovative technologies to estimate the ideal time of olive ripening, both for harvesting and for the production of oil and table olives. The intent is to elevate the sensory and nutritional value of the final product by facilitating cooperation between farms and consortia in different territories. It is planned to employ sensors, predictive models and data analysis to improve harvesting and processing processes, while also promoting greater collaboration among producers to ensure high quality standards.
